## Malta and Gozo: pay attention to the version

[Ftira Għawdxija](/recipes/ftira-ghawdxija/) on this site is a topped Gozitan bake with potatoes and savoury additions. It is not the same preparation as filling a bread roll for a sandwich. Its cultural note explains the distinction between this recipe and the flattened sourdough-bread tradition recognised by UNESCO.

Cheese also needs a little precision. Fresh, dried, and peppered ġbejniet behave differently.
